Herbed Mead: Semi-Sweet
Mead
Ingredients:
18# wild flower
honey,
1
gallon apple cider,
6
each B-1 and
Cal/Mag/Zinc
tabs,
3
Tbsp lemon juice,
2
oz strongly brewed
black tea,
1
t pectic enzyme,
1
pckt dried
Champagne-processs
wine
yeast rehydrated in 1 pt unfiltered apple
juice,
spring water to
6-gallons
Herbal Mix
for Mead:
16 oz 80 proof vodka, 1 Tbsp dried
rosemary, 1 tsp dried
cinnamon basil, 2 tsp
chopped dried angelica
root, #
1/2 tsp lightly
crushed fennel seed, 1 Tbsp lightly chopped dried
sweet
orange peel
Put the herbs in a fine
mesh
nylon bag and soak in the vodka
for
2 weeks. Use to
taste; in this brew I used 1 oz per gallon
of semi-sweet mead. |
